- 6 large eggs
- 2 cups cottage cheese
- 1 cup shredded cheese
- 1 cup chopped spinach
- ½ cup diced bell pepper
- ½ cup chopped onion
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Fresh herbs, sliced tomatoes, or avocado for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish.
- In a large bowl, whisk the eggs until the yolks and whites are fully combined.
- Stir in the cottage cheese until well incorporated.
- Add the chopped spinach, bell pepper, onion, garlic powder, onion powder, salt, and black pepper. Mix well.
- Fold in the shredded cheese, reserving a small handful to sprinkle on top.
- Pour the mixture into the prepared baking dish. Top with the reserved cheese.
- Bake for 40-45 minutes, or until the center is set and the top is golden and slightly puffed.
- Let it cool for 5 minutes before slicing. Garnish with fresh herbs, tomatoes, or avocado if desired.
