A hearty egg casserole packed with cottage cheese, fresh vegetables, and plenty of melted cheese. It’s rich in protein and ideal for meal prepping or serving a hungry crowd.

Ingredients

  • 6 large eggs
  • 2 cups cottage cheese
  • 1 cup shredded cheese
  • 1 cup chopped spinach
  • ½ cup diced bell pepper
  • ½ cup chopped onion
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh herbs, sliced tomatoes, or avocado for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish.
  2. In a large bowl, whisk the eggs until the yolks and whites are fully combined.
  3. Stir in the cottage cheese until well incorporated.
  4. Add the chopped spinach, bell pepper, onion, garlic powder, onion powder, salt, and black pepper. Mix well.
  5. Fold in the shredded cheese, reserving a small handful to sprinkle on top.
  6. Pour the mixture into the prepared baking dish. Top with the reserved cheese.
  7. Bake for 40-45 minutes, or until the center is set and the top is golden and slightly puffed.
  8. Let it cool for 5 minutes before slicing. Garnish with fresh herbs, tomatoes, or avocado if desired.
