Ingredients
- 1 lb jumbo shrimp
- 8 corn or flour tortillas
- 2 tbsp olive oil
- 2 tbsp taco seasoning
- 1 tsp cayenne pepper
- 1 ripe mango, diced
- 1/4 cup red onion, chopped
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt & pepper
- Optional: avocado, sour cream, queso fresco
Instructions
1. Prepare the Spicy Shrimp
- In a large bowl, mix olive oil, taco seasoning, and cayenne pepper.
- Toss the shrimp in the mixture until coated evenly.
- Marinate in the refrigerator for 15–30 minutes.
- Heat a skillet or grill pan over medium-high heat.
- Cook shrimp for 2–3 minutes per side until pink and slightly charred.
Pro Tip: Keep a close eye on the shrimp—they cook fast! Overcooked shrimp = rubbery shrimp. Aim for plump and just-charred.
2. Make the Mango Salsa
- In a bowl, combine mango, red onion, and cilantro.
- Squeeze lime juice over the mixture.
- Add salt and pepper to taste.
- Gently mix and refrigerate until ready to serve.
Mango Mastery: Pick a mango that gives slightly when pressed—that’s how you know it’s juicy and ready.
3. Assemble the Tacos
- Warm tortillas in a skillet or microwave.
- Add spicy shrimp, then spoon on mango salsa.
- Top with optional extras like avocado, sour cream, or queso fresco.
Taco Tip: Love a loaded taco? Double up your tortillas to prevent tearing.
