Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup pureed fresh strawberries
  • 1 cup graham cracker crumbs
  • 1 cup whole fresh strawberries
  • 1/2 cup white chocolate chips (optional)
  • 1/4 cup vegetable oil (for frying, optional)
  • Pinch of salt

Instructions

  1. In a medium bowl, mix softened cream cheese, powdered sugar, vanilla extract, and a pinch of salt until smooth and creamy.
  2. Fold in the pureed strawberries and blend until the mixture turns a lovely pink.
  3. Scoop a tablespoon of the cream cheese mixture and flatten it in your hand. Place a whole strawberry in the center and gently wrap the mixture around it to form a ball.
  4. Roll each ball in graham cracker crumbs to coat completely.
  5. Place the coated bites on a parchment-lined baking sheet.
  6. Refrigerate for about 30 minutes to firm up for a chilled version, or prepare for frying.
  7. If frying, heat vegetable oil in a deep skillet over medium heat. Fry bites in small batches until golden brown, about 2-3 minutes. Drain on paper towels.
  8. Optional: Melt white chocolate chips and drizzle over the top before serving.
  9. Serve chilled or warm, and enjoy every irresistible bite!
